Every year for Halloween we invite friends and family over to have fellowship, eat autumnal goodies, drink and have fun in costume. I always make a big batch of chili, homemade caramel apples, delicious, creamy squash dip and to wash it all down mulled hot apple cider. This year my chili recipe was especially spot on and I wanted to share for the upcoming holiday season.
Ingredients:
1 lb grass fed ground beef
1 lb grass fed ground veal
1 lb grass fed ground pork
3-4 gloves of garlic
2 containers of crushed tomatoes
1 container of beef stock
1 tsp chipotle pepper
2 tsp cumin
1 tsp smoked paprika
2 tsp oregano
3 cans of kidney beans
1 can of organic pumpkin puree
Instructions:
Heat a large dutch oven on the stove, add ground meat and chopped garlic. When meat starts to brown add in tomatoes, beef stock, and all spices let simmer for 1 hour, stirring occasionally. After a hour add in beans and pumpkin, taste and adjust seasonings.
Serve with sour cream chives and shredded cheese. Accompany with cornbread + salad and this meal is perfect for any chilly day or family gathering during this holiday season. Enjoy!
